I love a good chicken salad sandwich and I have to admit that I have tried it at most deli’s/cafe’s. All chicken salad sandwiches aren’t created equal. Rarely do I find one that is truly amazing, but I have recently discovered a way to make THE BEST chicken salad sandwich in a matter of a few minutes right in my own home! This is a great recipe to whip up at lunch time for me and the kids or a nice refreshingly light meal for dinner.
Chicken Salad Sandwich
- 1 Chicken Breast, cooked and diced
- 1 Apple, Pink Lady or something sweet and crisp
- 3-6 Tablespoons Ranch Dressing
- 2 Croissants, or any kind of roll
I dice up one cooked chicken breast. (I usually use a rotisserie chicken from Sam’s Club or Costco.) I then dice up one crisp sweet apple, leaving the skin on to add some color to the chicken salad. Now pour in 3-6 tablespoons (depending on how wet you like yours) of ranch dressing. I usually do about 3 tablespoons of Litehouse buttermilk ranch. Now we just pile this onto two large croissant rolls and dig in!
Note: If you like a little kick/spice in your chicken salad sandwich, I highly recommend you try Litehouse Mild Jalapeño Ranch Dressing. It is very delicious and has a kick of heat. If you are unable to find the jalapeño ranch you could even try adding a dash of crushed red pepper flakes into the regular ranch.
